During one of his cookery demonstrations, Frédéric Bau once absent-mindedly left his white chocolate in the bain-marie. When he realized his mistake, he was taken aback: The chocolate had turned blond and was giving off a delicate scent of freshly baked shortbread and caramelized milk. Delicious Dulcey was born.
